Eggplants Canoes

Eggplants are a great source of dietary fiber, vitamin B1 and copper, vitamin B6, manganese, niacin and potassium… But the most important is that is delicious and kids approved!
For this recipe I used Rice Cheese… I liked it better than the almond cheese! However, it is very rich (as any other cheese). It is rice based and therefore, maybe not the best option to eat lots of it if you want to lose fat.
